PDF export embeds the fonts used as subsets. The file carries the required glyphs rather than including the entire font file for unused characters. In a long book with several typefaces, this reduces the font portion of the output. OTF fonts with PostScript outlines are included as CFF in the PDF. Text stays searchable and is output using the chosen letterforms. You do not need to convert the type to outlines for this.
